It is used as a raw material for aspartic, malic, succinic, propionic, tartaric, dimethyl maleate, lactic, acrylic acids, fumaric acid, glyoxalic acid, and malonic. It is used as an inhibitor for transaminase reactions and as a preservative for oils and fats.
